Le Thoronet is first of all its Cistercian abbey — one of the three Provençal sisters — nestled in the wooded hills of the Var. After the cool of the stone and the silence of the cloister, it's a joy to extend the moment at the table.

A few minutes away, in Lorgues, Carnets de Voyage opens the doors of a house built in 1780: a terrace beneath the plane trees, a hidden garden and refined cooking, to extend a day of sightseeing at the table.

After the cool of the old stone and the silence of the cloister, the plate takes over the journey. We choose local, seasonal produce, then let it drift elsewhere: a spice, a cooking method, an unexpected pairing. The base stays Provençal, the change of scene plays out in the detail.

We cook on site and the menu changes every week, following the deliveries. The regulars know it well: you never sit down twice to the same menu, and there's always a fine butcher's cut for hearty appetites.
